'Mezcal' - from Nahuatl (Aztec) mexcalli, meaning "oven-cooked agave", from metl and ixcalli. 

So often the talk is about the different agaves that a mezcal is made from. But there is much less focus on the different distillation techniques found in Mexico for making mexcal. 

We'll use a single type of agave and explore different distillation techniques and how the distillation and terrior change from region to region in Jalisco, Michoacan and Oaxaca.
