The bar and restaurant industry has a problem; from top to bottom, everywhere you look, you see graft and corruption. In a time where craft chefs compete for and proudly list the sources or organic vegetables and sustainably raised beef, pork and poultry on their menus, bar programs are rarely following suit. This roundtable will attempt to poke the hornet’s nest by asking panelists and audience questions at the top of everyone’s mind:

Why is it that the bar owners and bar managers still believe that you can and should get something in return just for buying a product?

When and in what circumstances should you expect support?

When you are buying quality ingredients, is it still possible to retail 19% liquor cost?

What are the consequences, both long and short term when you buy exclusively based on the price?

Do we perceive the spirit companies, suppliers, importers and distributers as bottomless bags of money or are we working together with them as partners in a long chain of moving cases and making the industry better?

What are the legal consequences when we do get a “deal” and what should we expect?

Join Dushan Zaric and his panel of experts for this insightful seminar designed to create more transparency in the industry at large.

Beer is becoming a trendy ingredient among bartenders, but it also has a long and unusual history in mixed drinks. Learn about beer in all its versatility, including vintage punches, classic warm beverages such as Wassail and Flip, and contemporary cocktails. Led by Portland bartender Jacob Grier, author of Cocktails on Tap: The Art of Mixing Spirits and Beer and co-founder of the events group Brewing Up Cocktails, this seminar will show how beer can be used creatively in cocktails of any style.
